Poaching eggs, January 02 2012

I had never poached eggs before.
I used a big pot because I needed to poach quite a few.
There were tendrils of egg everywhere.
It was not pretty!
When you extract the eggs, they are delicious.
Do you think I need to use a smaller pot?

Or to poach eggs in a different liquid?

What are your recommendations?

  1. This video on You Tube answers all my questions:Poach the eggs and drop them in iced water to stop the cooking. Reheat them in simmering water for just 10 seconds and you can feed a big group.
