Ice Sprinkled Cookies


As promised, I made Saturday afternoon cookies.
I chose my daughter’s favorite (Ice Sprinkle Cookies)
Once again, I used my cookie bible.
Cookies Galore by Jacqueline Bellefontaine.

In order to make these cookies, you will need:
-1/2 cup of butter (I used hydrogenated Soy)
-1/2 cup of confectioners sugar
1 1/4 cup of all purpose flour
1 tablespoon vanilla
2 tablespoons of rice flour

Cream the butter and sugar
Incorporate the vanilla
Beat in the flour
Cook for 8 minutes in a 400 degree oven

Ice Sprinkle Cookies

For the icing:
1 cup confectioner’s sugar
1 tablespoon of lemon juice (fresh of course)
Colored sprinkle

TIP: add the color sprinkles INTO the icing mixture or the sprinkles will not adhere to the cookie

Serve with a glass of cold milk or black tea.
