The Recipe…For the Water Cress Soup


Water cress soup 


1 potato

1 pack of fresh water cress

chicken broth

cooking instructions: 

  • Chop up the water cress finely 
  • Julienne the potato
  • Put a few dabs of butter in a pan 
  • Cook the water cress until it reduces somewhat 
  • Incorporate the potato pieces 
  • Cook for 5 minutes on simmer 
  • Add the chicken broth (splurge for free range organic) 
  • Bring to a boil 
  • Let cool slightly 
  • Blend all ingredients in the blender (puree) 
  • Add a touch of lactose free cream and cook for another 30 minutes (do this as your guests are close to arriving so that the house is filled with the lovely warming smell) 

Serve with a piece of warm crusty bread
