Kibbutz Salad Recipe

The portion describes here serves 8 people.
Ingredients for the salad:

  • 2 bulbs of fennel
  • 2 avocadoes
  • 4 pink grapefruits
  • 4 small cucumbers
  • 3 packs of cherry tomatoes (go for yellow and red to make it prettier)
  • 1 package of feta cheese

Ingredients for the dressing

  • 1 pack of coriander
  • Juice of two limes
  • Olive oil
  • 1 clove of garlic

Instructions for the salad:

  • Gut the grapefruits and cube the grapefruit meat (keep the grapefruit shells intact, they will serve as your bowls)
  • Put the grapefruit shells in the fridge so that they remain firm
  • Cut the fennel and the avocado in strips (spray the avocados with lemon so that they do not lose their lovely green color)
  • Bevel cut the cucumbers (en biseau)
  • Slice the cherry tomatoes in half
  • Cube the feta
  • Mix all ingredients together in a salad bowl

Instructions for the dressing

  • Chop the coriander loosely 
  • Drop in a blender
  • Juice the two limes
  • Sprinkle with the lime juice
  • Whizz with olive oil until it takes on a pesto like consistency

Serving Instructions

  • Take a handful of the salad and serve it in the grapefruit bowls 
  • Add a sprig of mint
  • Decorate with a few olives (to taste)
