When it’s snowing and you want to liven up your household, you sometimes want to travel virtually.
I immediately thought of Thailand with its beaches, its warm weather that never drops below 25 degrees, the beauty of their landscapes, the hustle and bustle of their street markets. I suddenly did not see the snow anymore.
I put on a bathing suit and prepared to eat a light salad for lunch.
Ingredients for the salad:
Coriander
Fresh Mint
Coriander root (Hom Nam)
Lemon
1 4 ounce top loin of beef
1 box of cherry tomatoes
5 small cucumbers
Mint
10 grams of lemon grass
1 red onion
Ingredients for the dressing:
2 lemons
2 tablespoons of fish sauce
1 tablespoon of white sugar
1 small chili (de-seeded and sliced thinly)
2 cloves of garlic
2.5 tablespoons of white vinegar
Instructions:
Slice the cucumbers in thin diagonal strips
Chop the cherry tomatoes in quarters
Shave the coriander
Mince the onion and the garlic
Slice the lemongrass into rings
Thinly slice the chili pepper
Reserve all ingredients on a plate
Cook the steak (season to taste) and let sit for 10 minutes and then cut into strips
Juice the lemons
Create the dressing:
Assemble the vinegar, the fish sauce, the sugar, the garlic, the chili peppers as well as the lemon juice
Reserve to serve with the salad
Assembly Instructions:
Plate a few strips of steak with the lemongrass, tomatoes, cucumbers, coriander, coriander root and the onion
Drizzle with the dressing
Decorate with a few sprigs of mint
Disclaimer:
I could not find coriander root or lemongrass. To compensate I added way too much onion and quadrupled the hot chili ratio. This is why it burnt our tongues. I would advise to go lightly on the chilies. A little goes a long way.
Fun Fact:
Greg went crazy with the dressing and regretted it severely.
He would also advise to wash your hands before playing with your contact lenses.
