I am allergic to carrots. I even get a rash if I try to peel carrots.

Over the weekend, I made a red lentil soup. The recipe called for carrots. I replaced them with parsnips. It was rather a stupid assumption. From a chemical standpoint, parsnips are essentially white carrots.
So, I wonder, what can replace the carrot from a taste standpoint. What would you recommend?
