Tiliapia with prosciutto and walnut maple syrup drizzle


On Monday’s, in the cooksploratrice household, we always have fish. It’s the Monday night tradition. In most households, it’s football night. In ours, it’s  Fish night. Now I like to play with themes. Every day of the week has a different theme and the menu changes every week (we have an 8-week menu right now.)

To recreate this recipe, you will need one piece of prosciutto, 1 tablespoon of walnuts, 1 tablespoon of onion and 1 tea spoon of maple syrup per piece of fish. Chop the prosciutto and the walnuts into small shavings.  You will bake the tilapia for 8-minutes with a tablespoon of orange juice in a 400 degree oven. When the fish becomes opaque, leave it on the counter to cool slightly. In a hot pan, grill the onion, the garlic clove, the walnuts and the prosciutto. When the house starts to smell lovely, add the maple syrup and let it become a glaze (it will take no more than one minute.)

Serve the piece of fish on a bed of rice and drizzle the glaze on top. 

It was to die for. Absolutely delicious.
